BATCH 4 AT LONG LAST
We mixed a 1x batch using the oils as laid out in the
original opencola recipe, with the following adjustments:
orange +.25ml
lime +.25ml
cassia -.25ml
nutmeg -.25ml
neroli -.25ml
water +20ml
or in other words new 7x recipe.
Comments: 10g gum arabic measured in ml (test tube) = 1 3/7
test tubes or 22 ml. Approximately 30ml water used to
dissolve the gum: possibly too much.
Mixed the 7x with bosch cordless, 3-5 mins at variable speeds.
A cloudy emulsion formed. Mixed up 2x syrup using 2x 10 ml
flavour oils and the postal recipe.
A whitish sediment formed on the surface of the syrup, unknown
cause although we suspect the gum. The cola mix seems cloudier
than previously witnessed. No oils evident so the emulsion is
stable for the moment at least. We skimmed off the white layer
(spoon) and kept the syrup for cola use. (nB, the next day a
2nd unskimmed batch of syrup was seen to have its whitish layer
reduced to almost nothing, suggesting that it is only a
temporary effeoct of mixing process).
The resulting cola syrup when tested with fizzy water tasted
acceptable although visibly cloudier than batch 3. Note: this
might be because of the batch 4 switch to golden caster sugar
(previously white).
TO DO: buy the Braun 4050 400W hand blender, Argos 29.95 GBP
(DONE: 29/11. somehow it cost 19.95, unsure if sale or argos
error); try 2% vodka inclusion in the pre-emulsion as
suggested at the Stokesley High Street summit; buy extra
measuring syringes for the flavour oils, to avoid lastminute
washing/drying issues (DONE: 30/11); pick up bulk Valon water
from LIDL.
