Richard Groves' research had just arrived
causing quite a stir. The desire to abandon gum for
another emulsifier is high: some of Richards research
supports this move, however we decide to continue
on the merit of the last mysterious lab success.
The gum was measured into 10g batches at Mina Rd
Post Office. The woman behind the counter recalls
a memory of Gum Arabic trees in her neighbourhood
and how she would avoid climbing them, she seemed
surprised that gum was in cola and a little
put off the drink.
One of the main problems we face right now is the
chore of gum grinding and our general mistrust
in the Acacia Senegal tree sap.
Kate began the process of dissolving the gum in hot
water observing the process something didn't seem
right, the gum was reacting differently to the
previous batch the texture was wrong.
Tasting confirmed it, it was a different strain of
gum ... WE HAVE HAD IT
We decided to continue on the reasoning that
this gum may lead to a greater success of good
emulsification.
